Something Like a Watermelon

It's often said that the mind works in mysterious ways.  Seemingly random ideas will somehow connect to one another and lead to inspiration when you least expect it. That is what happened yesterday when I put on this green skirt with navy dots, which was a $15 find from Marshals. When I added the pink belt for a pop of color, I thought to myself that this outfit makes me look something like a watermelon. Well, that thought then connected to my taste buds and a craving for some actual watermelon was born. Lucky for me, a big one was already sitting on the kitchen counter.

Now that the seed was planted, a train of thought began. Why not do something creative with the watermelon? I recalled seeing in one of my many cookbooks a recipe for watermelon skewers to be served as an appetizer. At the time it seemed like an odd idea because the skewers paired watermelon with Feta cheese, however being in an adventurous spirit I thought it sounded like a mouth watering idea to try.




Below you will see what I did for this simple summer appetizer of watermelon and Feta skewers. This would be a fun thing to serve for the Fourth of July or as an amuse-bouche to get you started before the first or main course of your summer meal. With it we had chicken kabobs and saffron rice yesterday, so the skewers continued the food on a stick theme.

So here's how I made it. It's pretty self-explanatory, but I'll add some narration to the process. To begin, get yourself some watermelon and Feta and cut into equal sized cubes.


Then get some fresh basil. A few weeks ago I needed basil for another recipe and while at the store I was faced with a choice: Buy a package of basil for $2.29 or an entire basil plant for $3.99? The plant was the better deal, but for a person like me who doesn't exactly have a green thumb, it might be imminent death for the plant. Well, as you can see from the picture below, the plant is still thriving (for now).

You can also substitute mint for basil in this appetizer. In fact, we are going to try that tonight (we always have mint on hand for mint juleps) to see which is better, mint or basil?


Next assemble the skewer. You can do this in a variety of ways, but I chose to keep in simple by stacking one piece of watermelon with one chuck of Feta and sandwiching the basil in between. I also drizzled some balsamic vinegar over the top just to tie all the flavors together. I chose not to show the balsamic here because it just sort of looked like a brown mess on the plate when I was done. Regardless, the end result was yummy and refreshing!
